I left my blog for a while because it was pretty hard finding time to write but I really missed it. I used to post a recipe and tons of guide through photos but now I'm going to post one photo and the recipe but don't worry if the recipe is tricky or difficult I'll add some links so that you can find it easier to make it!<br />

- 200 g of unsalted butter<br />
- 200 g dark chocolate<br />
- 200 g sugar<br />
- 200 g eggs<br />
- 90 g flour<br />
<br />
1. Melt butter and chocolate together, set aside and let it cool. Beat eggs and sugar at medium speed and slowly add the chocolate and butter mixture, then add flour.<br />
<br />
2. Refrigerate mixturefor 2 hours and then transfer into a muffin pan filling up to 3/4. Bake at 200°C for eleven minutes, if you over bake them you won't get the melting chocolate in the center.<br />

I'ts been quite hard to find time to write, it's also difficult to feel inspired to go to the kitchen and bake something but there are some times in which I have the need to try something different that I can't find at the stores and I have the necessity to cook something, I'm no saying that I don't like to cook anymore but I guess that in a few weeks I will be back to normal, have you ever felt like this?<br />

Choux Pastry:<br />
- 250 ml of water<br />
- 100 gr. of unsalted butter<br />
- 150 gr. of flour<br />
- 4 eggs + vanilla<br />
- a pinch of salt and sugar<br />

Vanilla Cream:<br />
- 250 ml of milk<br />
- 80 gr. of sugar<br />
- 3 egg yolks<br />
- 30 gr. of cornstarch<br />
- 30 gr. of unsalted butter<br />
- 1 teapoons of vanilla paste<br />
<br />
Strawberry Glaze:<br />
- 1 c. of powdered sugar<br />
- 1/4 c. of milk<br />
- 1 teaspoon of vanilla extract<br />
- enough food colorant<br />

<br />
Choux Pastry: Put butter, water, salt and sugar in a small pot. When butter melts completely add flour and quickly combine it, continue cooking until it forms a dough and the edges separate from the pot, remove from heat and let it cool completely. Beat in 1 egg at a time and vanilla, pour dough into a pastry bag and form the eclairs (<a href="http://betivanilla.blogspot.mx/2011/10/pumpkin-eclairs.html">here's a tutorial on how to make them</a>). Bake at 350°F for 20 minutes.<br />
<br />
Vanilla Cream: Boil milk with vanilla, in a medium bowl beat egg yolks and sugar until they have a light yellow color, then add cornstarch and slowly begin to add milk. Put everything back into the pot and cook until it thickens, remove from heat, cover completely and let it cool.<br />
<br />
Fill eclairs with vanilla cream with the help of a pastry bag.<br />

Strawberry glaze: in a small bowl combine all the ingredients adding more milk if necessary, carefully dip eclairs with this glaze and let it harden.</div>

- 1/2 teaspoon baking powder<br />

- Enough chocolate chips<br />

1. Sift flour, baking powder and cocoa powder. Beat butter and sugar until light and fluffy, add egg and vanilla.<br />

2. Stir in flour mixture and combine with chocolate chips, cover dough and refrigerate for 1 hour.<br />
<br />
3. Make small balls and put them in a prepared pan, bake at 320°F for 15 minutes or until bottom looks brown.<br />

So I was in the kitchen wondering what to cook while I was eating m&m's... well I came up with the idea to stuff truffles with m&m's and other candies I mean, what could be better than chocolate with chocolate right? I completely invented the truffle recipe and it turned out lovely<br />

- 1 teaspoon of coconut oil<br />
- 1/2 teaspoon of hazelnut oil<br />

1. Chop chocolate and put everything in a small pot until it melts completely, pour into a small container and refrigerate until it hardens.<br />

2. Make small balls, press them and put an m&m in the middle, cover completely and roll the ball with cocoa powder or graham cracker crumbs. Refrigerate and they're ready to eat.<br />

- 75 gr. of almond flour<br />
- 150 gr. of powdered sugar<br />
- 1 teaspoon of vanilla paste<br />

1. Beat egg whites until soft peaks form, add sugar and continue beating until hard peaks form.<br />

2. In another bowl sift almond flour and powdered sugar. Combine both mixtures and add vanilla. Pour into a pastry bag and make small circles in a prepared pan, leave them 1 hour until the top is hard, then bake them at 175°C for 10-12 minutes.<br />

3. Let them cool completely. Beat 1 stick of butter until soft, add 2 c. of powdered sugar and 1 tablespoon of vanilla paste, fill macarons and enjoy.<br />

- 1 kg of flour<br />
- 450 ml. of milk<br />
- 40 gr. of dry active yeast<br />
- 100 gr. of sugar<br />
- 500 gr. of unsalted butter<br />

1. Dissolve yeast with 50 ml of warm milk. Sift flour and beat with sugar, yeast and slowly add milk. Cover dough and let it rise in a warm place for 1 hour.<br />

<br />
2. Take butter and with the help of a rolling pin press it until you make a square of about 1/2 inch thick. Take the dough and make a star of 4 sides and put butter in the middle, you should have a + shape. Cover butter completely with the sides of the star.<br />
<br />
3. Roll dough until you make a rectangle and fold 4 times, roll again into a rectangle and fold 4 times. Put dough in the fridge if it becomes a bit soft and make sure that you add enough flour so that the dough won't stick to the table. And it's done.<br />

Fisrt of all Happy 4th of July to all the americans they always know how to celebrate! I didn't had the time to make a simbolic dessert but I did made some waffles which are always great to start the day, perfectly combined with jam and fresh fruit... or nutella and ice cream?<br />

- 1 1/2 c. of flour<br />
- 1 teaspoon of baking powder<br />
- 2 eggs<br />
- 1 c. of milk<br />
- 1/4 c. of melted butter<br />
- 1 teaspoon of vanilla<br />
- 1/4 teaspoon of cinnamon<br />
<br />
1. Combine flour, cinnamon and baking powder. Mix egg yolks with milk, butter and vanilla.<br />

2. In another bowl beat egg whites until peaks form and carefully combine both mixtures. Pour mixture into a waffle iron and cook until golden brown.<br />

- 250 gr. of flour<br />
- 1/4 c. of cocoa powder<br />
- 75 gr. of sugar<br />
- 7 gr. of dry active yeast<br />
- 1 egg + 2 yolks<br />
- 100 gr. of unsalted butter<br />
- 50 gr. of shortening<br />
- 1/4 teaspoon of peanut oil<br />
<br />
1. Dissolve yeast in warm water, sift cocoa powder, baking powder and flour. Beat butter, shortening and sugar until light and fluffy, add eggs one at a time and peanut oil.<br />
<br />
2. Combine with flour mixture, cover dough and refrigerate 1 hour. Make medium balls of about 1.5 inches, press them and fill them with 1/2 teaspoon of peanut butter, cover completely and make balls again. Press slightly.<br />

1. Put guavas and 1/2 c. of sugar in a small pot and bring to boil until sugar dissolves, let it cool, make a puree and strain.<br />

2. Put puree with remaining sugar in a medium pot and bring to boil until sugar dissolves, meanwhile beat egg yolks, add hot mixture slowly and then put everything back in the pot and cook until it thickens.<br />

3. Remove from heat and add butter cubes one at a time mixing well. Pour mixture into crust and refrigerate for at least 2 hours.<br />

- 1 1/4 c. of lychee puree<br />
- 1/2 c. of almond milk<br />
- 1 tablespoon of honey<br />
- 5 gelatine leaves<br />
- 1 tablespoon of vanilla<br />
<br />
1. Strain lychee puree and put in a medium pot on low heat, add honey and vanilla, meanwhile soften gelatine leaves in cold water.<br />
<br />
2. Dissolve gelatine in lychee pure, remove from heat and let it cool. Add almond milk and mix, pour mixture into martini cups and let them set in the fridge for at least 2 hours<br />

Making this cake was one of the easiest things ever and I can almost say that it is "light" just because it has tons of apples and almost no flour but you have that pie taste when you bite into it. Rum makes all the other flavors pop but it doesn't overpower them.<br />

- 1 stick of butter, melted<br />
- 1/2 c. of sugar<br />
- 3/4 teaspoon baking powder<br />
- 2 eggs<br />
- 8 small apples, peeled<br />
- 1 tablespoon of Rum<br />
- 1 tablespoon of vanilla<br />

1. Core apples and slice them. Sift flour and baking powder. In a medium bowl mix eggs, Rum and vanilla until foamy, add sugar and continue mixing.<br />
<br />
2. Add half of the flour mixture and then half of the melted butter, cooled; repeat. Folf apples into batter and pour into a prepared pan. Bake at 350°F for about 50 minutes.<br />
<br />
*It will appear as if there wasn't enough mixture.<br />

- 1 c. of milk<br />
- 1 c. of yogurth<br />
- 2 tablespoons of honey<br />
- 1 tablespoon of vanilla<br />
- 1/4 teaspoon of cinnamon<br />
- 6 gelatine leaves<br />
<br />
1. Soak gelatine leaves in cold water. Bring milk to a soft boil. In a medium bowl combine yogurth, honey, vanilla and cinnamon.<br />
<br />
2. Dissolve gelatine leaves in milk and slowly pour into yogurth mixture stirring well.<br />
<br />
3. Pour into a prepared pan and refrigerate for 3 hours, decorate with fresh fruit.<br />

It's a classic cake in my country but they don't always make it right, sometimes it's too dry or too wet but if it's done right it can be one of the best things you've ever tried. It is often made with different types of fruit or plain but I like it with canned peaches.<br />

- 1/2 c. of evaporated milk<br />
- 1/2 c. of whole milk<br />
- 1 tablespoon of vanilla<br />

1. Make <a href="http://betivanilla.blogspot.mx/2012/03/white-cake-with-strawberry-jam.html">white cake</a> according to instructions and let it cool completely, remove from the pan and then put it back, pierce the cake with a fork. Combine the rest of the ingredients in a medium bowl.<br />

2. Pour mixture into cake and let it soak for 1 hour in the fridge. Meanwhile beat 1c. of whipping cream with 1 tablespoon of powdered sugar, slice 1/2 can of peaches.<br />

- 2 1/2 tablespoons of grenetin<br />
- 1 c. of corn syrup<br />
- 1 1/2 c. of sugar<br />
- 1 c. of water<br />
<br />
1. In a large bowl dissolve grenetin with 1/2 c. of water. In a medium pot combine sugar, 1/2 c. of water and corn syrup, cook on low heat until sugar dissolves and then let it boil until it reaches 240°F.<br />
<br />
2. Beat grenetin and add sugar mixture slowly, continue beating on high speed until it becomes white and fluffy. Take 2/3 of the mixture and put it in another bowl. Beat in 2 tablespoons of cocoa powder to the remaining mixture and pour it in a pan.<br />
<br />
Cover with 1/3 of white mixture. Beat in 2 tablespoons of Nesquick strawberry powder to the remaining mixture and pour it in the pan. (at this point it will be really sticky so you need to make it fast) Put it uncovered in the fridge for at least 8 hours.<br />

1. Beat butter and sugar until light and fluffy, add eggs one at a time and vanilla. In another bowl combine flour, cocoa powder, baking soda and baking powder, combine both mixtures alternating with yogurth. Pour it in a prepared pan and bake at 350°F for 40 minutes, let cool completely. Cut it in half and spread apricot jam in the middle.<br />
