Lychee and Almond Jelly


First of all if you can find fresh lychees please make this jelly with them it really makes a difference. The combination of almonds and lychees is simply amazing and I used few ingredients, this recipe is quick and easy



- 1 1/4 c. of lychee puree
- 1/2 c. of almond milk
- 1 tablespoon of honey
- 5 gelatine leaves
- 1 tablespoon of vanilla

1. Strain lychee puree and put in a medium pot on low heat, add honey and vanilla, meanwhile soften gelatine leaves in cold water.

2. Dissolve gelatine in lychee pure, remove from heat and let it cool. Add almond milk and mix, pour mixture into martini cups and let them set in the fridge for at least 2 hours
Decorate with almonds and fruit

  7. I was in California last week, and I did see some fresh lychees in a grocery store. Sadly, I rarely see them here in Austin. They sound delicious here with the almonds!

  14. I've never had lynchees so it's hard for me to imagine how this tastes but I love almond! If how it looks is half and good as how it tastes, it must be wonderful.
