I'ts been quite hard to find time to write, it's also difficult to feel inspired to go to the kitchen and bake something but there are some times in which I have the need to try something different that I can't find at the stores and I have the necessity to cook something, I'm no saying that I don't like to cook anymore but I guess that in a few weeks I will be back to normal, have you ever felt like this?
Choux Pastry:
- 250 ml of water
- 100 gr. of unsalted butter
- 150 gr. of flour
- 4 eggs + vanilla
- a pinch of salt and sugar
Vanilla Cream:
- 250 ml of milk
- 80 gr. of sugar
- 3 egg yolks
- 30 gr. of cornstarch
- 30 gr. of unsalted butter
- 1 teapoons of vanilla paste
Strawberry Glaze:
- 1 c. of powdered sugar
- 1/4 c. of milk
- 1 teaspoon of vanilla extract
- enough food colorant
Choux Pastry: Put butter, water, salt and sugar in a small pot. When butter melts completely add flour and quickly combine it, continue cooking until it forms a dough and the edges separate from the pot, remove from heat and let it cool completely. Beat in 1 egg at a time and vanilla, pour dough into a pastry bag and form the eclairs (here's a tutorial on how to make them). Bake at 350°F for 20 minutes.
Vanilla Cream: Boil milk with vanilla, in a medium bowl beat egg yolks and sugar until they have a light yellow color, then add cornstarch and slowly begin to add milk. Put everything back into the pot and cook until it thickens, remove from heat, cover completely and let it cool.
Fill eclairs with vanilla cream with the help of a pastry bag.
Strawberry glaze: in a small bowl combine all the ingredients adding more milk if necessary, carefully dip eclairs with this glaze and let it harden.
