Apple Cinnamon Cookies


- 3 c. flour
- 1/2 tablespoon baking powder
-  a pinch of salt
- 250 g. unsalted and softned butter
- 200 g. brown sugar
- 1 egg
- 1 egg yolk
- 1/4 c. milk
- 1 tablespoon vanilla
- 1 tablespoon cinnamon
- 2 Gala apples

1. Beat butter, sugar and vanilla until light and fluffy, add egg and egg yolk. Stir in flour, cinnamon and baking powder. Mix until firm, cover the dough and refrigerate for about an hour. Peel the apples and chop them into small squares.

2. Take out the dough and mix with the apples. Make small balls and put on a baking sheet, press a little bit and sprinkle some brown sugar and cinnamon on top. Bake for 15 min at 360°F. Let them cool.


Icing: mix one cup of icing sugar with vanilla extract and a little bit of milk. Pass a fork through the icing and pour it over the cookies.


*Tips: Make the balls when the dough is really cold, otherwise it will start to melt and it will be hard to make them. Make sure that the cookies are completely cold before you put the icing, the icing should be a little bit thick. Enjoy!
