Individual Pumpkin Cakes


It looks good right? well it was really good, individual desserts are always great and they are perfect for special ocassions. Actually my mom made them and I though they were a good idea, it is something different and they turned out amazing.

- 1 1/4 c. flour
- 1/2 teaspoon of baking powder
- 3/4 c. sugar
- 1/2 c. unsalted butter
- 1/4 c. pumpkin pure
- 1 tablespoon of pumpkin pie spice
- 3 eggs

1. Beat butter and sugar until light and fluffy, add eggs one at a time. Stir in the pumpkin pure, flour, baking powder and pumpkin pie spice. Bake at 360°F for 50 minutes.

[ let it cool for at least 1 hour ]

2. With a round cookie cutter cut the cake and then cut the circle in half. Make the filling by mixing 1 c. of whipped cream, 1 teaspoon of vanilla and 1 teaspoon of pumpkin pie spice. Fill the bottom part and cover it, top it with a little bit more and decorate with caramelized pecans.

[ melt 1/2 c. of sugar until you make a caramel and then cover the pecans ]


You can also make squares, but personally I like more the circles, it gives the impression of a real cake.
