Pumpkin Eclairs


Are those fingers? no :) actually they are just pumpkin eclairs filled with pumpkin cream, topped with purple icing and a slice of almond, they look perfect for Halloween. I used the same recipe as in the Pumpkin Cream Puffs and the results? totally delicious!

Follow the recipe on the Pumpkin Cream Puffs post but instead of making puffs just take the pastry bag and make chubby lines like the ones in the picture, don't worry they are really easy to make


Bake them for 30 minutes at 350°F until golden brown, then slice them in half and remove the soft dough inside. The dough is raw and by removing it you will have more room for the filling and also they will be lighter.


Make a white icing with 1 1/2 c. of icing sugar, 1 teaspoon of vanilla and about 1/4 c. of mil (you won't need it all), add some purple food coloring and stir until combined then take the top of the eclair and just dip the tip, quickly fill them with the Pumpkin cream and add the other part of the eclair. 


Take an already peeled almond and cut it in half, then put it in the tip. That's all, they are very simple, delicious and perfect for parties!
