Banana Bread Muffins


It is now a tradition (weird tradition) to have tons of bananas in my house, my brother used to eat like 3 of them everyday and now he decided to eat other fruits, while the kitchen was full of bananas I could only think of banana cake but I've made it before, therefore and with my new muffin liners I decided to make banana bread muffins, it's a delicious classic that my dad loves to devour

- 1 2/3 c. of flour
- 1 1/4 teaspoon of baking powder
- 1/4 teaspoon of baking soda
- 110 gr. of unsalted butter, softened
- 2 ripe bananas
- 4 tablespoons of sour cream
- 1/2 c. of brown sugar
- 2/3 c. of chopped pecans
- 2 eggs
- 1 tablespoon of vanilla

1. In a medium bowl combine flour, baking powder, baking soda and chopped pecans. Beat butter and sugar until light and fluffy, add eggs one at a time. In a small bowl mash bananas and combine them with sour cream and vanilla. Combine all mixtures.


2. Prepare a muffin pan with muffin liners and preheat the oven at 360°F, fill them with the batter up to 3/4.


It was actually a bit hard to fill these muffin liners
3. Bake them for 15 minutes or until completely risen and slightly brown.



I could barely took the final product pictures and I wanted to add some frosting on top but everybody was hungry and they ate them just like that but I can proudly say that they loved them and there are no muffins left.

  3. I am a fan of banana-inspired recipes. I understand the panic when you have a bunch of bananas that are turning darker and darker in color everyday. This is a nice recipe to serve for breakfast or snacks. Thanks!

  6. I have a friend who HATES bananas. I don't know why. Something about it being soft and dry and mushy or something. I, on the other hand, adore them--I always get a bunch when I'm grocery shopping. One of the best things about them is that they're so versatile! Raw-eating, smoothie-adding, baking! Your muffins look superb, especially in those liners ;]

  7. The muffin liners are so refreshing. I love the look of square papers. The banana muffins look yummy too. I actually love bananas, but I don't like to eat them when they're ripe, so every other week, I'm making banana bread.

  8. Yum! Love those red wrappers. I make banana muffins a lot. There always seem to be 3 that are too ripe toeat, so into the freezer tosave for muffins.

  11. These are beautiful muffins all dressed in their fancy outfits! I can imagine your house was smelling quite delicious as they baked - no wonder they could hardly wait to eat them, I bet even your camera must have been drooling a bit! :)

  13. These muffin liners look great :) I love banana bread but I think this recipe is great because then I wont be 'inclined' to eat the whole loaf hehe and we have that weird tradition too! We always have at least a dozen bananas at home hahaha
