Individual Puff Pastry Tarts

I can't think of a more delicious way to begin a meal than with this tarts I mean every single ingredients is perfect: puff pastry, caramelized onions, melted cheese, portobellos and sliced tomatoes all combined with fresh herbs.

1. First you'll need about 1 pound of puff pastry, roll the dough and cut circles of about 5 inches. Then with a smaller cutter make a mark without reaching the bottom, with a fork make some holes.

2. You can use any topping you like but I decided to make two types of tarts, the first one was with crumbled goat cheese, caramelized onions, rosemary and sliced portobellos.

3. Brush the edges with egg and drizzle olive oil on top, sprinkle with salt and bake them for about 15 minutes at 360°F.

4. The other ones I made them with mozzarella cheese, sliced tomatoes and thyme. Brush the edges with egg and bake them for about 15 minutes at 360°F.

You'll want to make them over and over again
