Peach Cookies


So here's one of my favorite cookies, they are so special because my grandmother gave me some of the peach jelly that she keeps while making dry peaches, it is really delicious and I love the consistency it's almost like honey. I thought about using it instead of regular jam and they were just great

- 1 stick of unsalted butter
- 85 gr. of sugar
- 1 egg yolk
- 200 gr. of flour
- 1 medium dried peach

1. Chop dried peach and toss it with flour. In a medium bowl beat butter and sugar until light and fluffy then add the egg yolk and mix just until combined, stir in flour and peach. Roll the dough with a rolling pin and start cutting it with cookie cutters, put them in a prepared pan and bake them for about 10 minutes at 360°F.



2. You can eat them just like that or... to make them better make a white glaze  and cover the donut cookies with it, slightly drizzling it on top of them with a small fork.



3. Take the bottom and add some peach jelly or jam or whatever you have :) it's ok any jam works and then  carefully cover them with the glazed cookie.



Put them on a beautiful plate and whatch them dissapear, enjoy!

  2. These look completely amazing! I've done a cookie like this w/ red currant jelly for the holidays, but I've never thought to replace it with peach jam (my fave!)

  9. The dried peach in the dough makes them even moe special! I love how they look! The white glaze is so decorative :) I'd love to taste them!
