Chocolate Lava Cake


I left my blog for a while because it was pretty hard finding time to write but I really missed it. I used to post a recipe and tons of guide through photos but now I'm going to post one photo and the recipe but don't worry if the recipe is tricky or difficult I'll add some links so that you can find it easier to make it!


- 200 g of unsalted butter
- 200 g dark chocolate
- 200 g sugar
- 200 g eggs
- 90 g flour

1. Melt butter and chocolate together, set aside and let it cool. Beat eggs and sugar at medium speed and slowly add the chocolate and butter mixture, then add flour.

2. Refrigerate mixturefor 2 hours and then transfer into a muffin pan filling up to 3/4. Bake at 200°C for eleven minutes, if you over bake them you won't get the melting chocolate in the center.

Strawberry and Vanilla Eclairs


I'ts been quite hard to find time to write, it's also difficult to feel inspired to go to the kitchen and bake something but there are some times in which I have the need to try something different that I can't find at the stores and I have the necessity to cook something, I'm no saying that I don't like to cook anymore but I guess that in a few weeks I will be back to normal, have you ever felt like this?



Choux Pastry:
- 250 ml of water
- 100 gr. of unsalted butter
- 150 gr. of flour
- 4 eggs + vanilla
- a pinch of salt and sugar

Vanilla Cream:
- 250 ml of milk
- 80 gr. of sugar
- 3 egg yolks
- 30 gr. of cornstarch
- 30 gr. of unsalted butter
- 1 teapoons of vanilla paste

Strawberry Glaze:
- 1 c. of powdered sugar
- 1/4 c. of milk
- 1 teaspoon of vanilla extract
- enough food colorant






Choux Pastry: Put butter, water, salt and sugar in a small pot. When butter melts completely add flour and quickly combine it, continue cooking until it forms a dough and the edges separate from the pot, remove from heat and let it cool completely. Beat in 1 egg at a time and vanilla, pour dough into a pastry bag and form the eclairs (here's a tutorial on how to make them). Bake at 350°F for 20 minutes.

Vanilla Cream: Boil milk with vanilla, in a medium bowl beat egg yolks and sugar until they have a light yellow color, then add cornstarch and slowly begin to add milk. Put everything back into the pot and cook until it thickens, remove from heat, cover completely and let it cool.

Fill eclairs with vanilla cream with the help of a pastry bag.


Strawberry glaze: in a small bowl combine all the ingredients adding more milk if necessary, carefully dip eclairs with this glaze and let it harden.

Triple Chocolate Cookies


Lately it's all about cookies, I think I've become addicted to them but they idea of dipping them in milk makes me feel like a kid. First I thought about making chocolate cookies but they were going to be a little bit boring so I added chocolate chips but there was still something missing so I added white chocolate chips to make a really good cookie

- 250 gr. of flour
- 125 gr. unsalted butter
- 100 gr. of sugar
- 4 tablespoons cocoa powder
- 1 egg
- 1/2 teaspoon baking powder
- 1 teaspoon of vanilla
- Enough chocolate chips

1. Sift flour, baking powder and cocoa powder. Beat butter and sugar until light and fluffy, add egg and vanilla.

2. Stir in flour mixture and combine with chocolate chips, cover dough and refrigerate for 1 hour.

3. Make small balls and put them in a prepared pan, bake at 320°F for 15 minutes or until bottom looks brown.

Flourless Chocolate Cake



- 200 gr. of bittersweet chocolate
- 200 gr. of unsalted butter
- 1 c. of sugar
- 5 eggs divided
- 2 tablespoons of flour

1. Combine chocolate and butter in a medium bowl, put on top of a small pot with boiling water and melt completely. Add 2/3 c. of sugar and let it cool, add egg yolks, flour and a pinch of salt.

2. Beat egg whites until they begin to rise, add remaining sugar and beat until hard peaks form, carefully combine both mixtures and pour into a prepared pan. Bake at 350°F for 40-50 minutes.

Candy Truffles


So I was in the kitchen wondering what to cook while I was eating m&m's... well I came up with the idea to stuff truffles with m&m's and other candies I mean, what could be better than chocolate with chocolate right? I completely invented the truffle recipe and it turned out lovely

- 120 gr. of dark chocolate
- 1 tablespoons of sour cream
- 1 teaspoon of coconut oil
- 1/2 teaspoon of hazelnut oil

1. Chop chocolate and put everything in a small pot until it melts completely, pour into a small container and refrigerate until it hardens.


2. Make small balls, press them and put an m&m in the middle, cover completely and roll the ball with cocoa powder or graham cracker crumbs. Refrigerate and they're ready to eat.



*You can use any other candy or chocolate that you like and you can roll the truffles with powdered sugar, cocoa powder, graham cracker crumbs, oreo crumbs or whatever you like the most!

Vanilla Bean Macarons


My very first macarons. They say that if you can make macarons then you are a great patry chef..well.. mine don't look smooth and silky but they were very delicious, I now know what mistakes I made but for being my first batch they didn't turned out so bad.

- 2 egg whites
- 35 gr. of sugar
- 75 gr. of almond flour
- 150 gr. of powdered sugar
- 1 teaspoon of vanilla paste

1. Beat egg whites until soft peaks form, add sugar and continue beating until hard peaks form.



2. In another bowl sift almond flour and powdered sugar. Combine both mixtures and add vanilla. Pour into a pastry bag and make small circles in a prepared pan, leave them 1 hour until the top is hard, then bake them at 175°C for 10-12 minutes.

3. Let them cool completely. Beat 1 stick of butter until soft, add 2 c. of powdered sugar and 1 tablespoon of vanilla paste, fill macarons and enjoy.


 *Helpful tips: use old egg whites, you can leave them in the fridge for up to 5 days and let them cool completely before beating them. When the mixture is done use a padle and press the mixture into the bowl while making circles, this will make the mixture shiny.

Chocolate Chip Cookies


I struggled while finding the perfect chocolate chip cookie recipe, whenever I made them they were crunchy and flat so I decided to use this recipe. The yeast in the dough really makes the cookies a lot better, they turned out fluffy, soft and delicious.



- 1 dough
- 1 c. chocolate chips

1. Make dough according to instructions and then incorporate chocolate chips.

2. Make small balls of about 1 inch or bigger if you like and bake them at 300°F for about 20 minutes or until the bottom looks golden brown
You can make ice cream sandwiches with them

French Desserts Part 2


"Profiteroles Au Chocolat"... ice cream? :) chocolate sauce? :D weight gain? :|   ... Honestly I can't describe how bad I feel after eating all of these desserts but they are really addictive and I just can't stop I feel like a happy pig right now. "Charlotte Aux 2 Pommes" it's like an apple sandwich with a buttery touch and apricot jam



"Pithiviers" I spent a lot of time to make it but the almond filling was just as I expected, sweet but not too sweet and with a crunchy crust



As you can see this "Grand-Marnier Souffle" didn't turn out that perfect, it was a mistake since somebody opened the oven door but it still was delicious
Soft "Brioche"... with ice cream haha I just love ice cream but you can
make sandwiches with this bread or dip it in warm milk or spread 
Nutella on top and now you are hungry

French Desserts Part 1


So these are some of the desserts that I made in French Cuisine I'm not posting the recipes in here since they are a lot but if you want the recipe you can email me and I will happily send it to you. These are called "Beignets de Carnaval" and they are almost like a donut but with a slight anise touch.




"Beignets Aux Pommes de Terre et Creme Anglaise" who doesn't like deep fried apples with the perfect cream to dip them?


This is a thin and crispy tart called "Croustade Gasconne" similar to apple strudel but for me this one is way better since you can savour the marinated apples.




Classic "Crepes Suzette" with orange sauce and Brandy



The perfect "Crème Brûlée" cold custard with caramelized sugar on top but it is better it you freeze it since it almost feels like ice cream
