When you try this roll you won't stop until the last bite, it is delicious, fluffy and light, honestly, there is NOTHING wrong with it. The recipe is from my mom but please give it a try!
- 1/2 c. flour
- 1/2 c. pumpkin pure
- 2 teaspoons of pumpkin pie spice
- 1 teaspoon of baking powder
- 4 eggs divided
- 1/3 c. sugar
- 1/2 c. sugar
1. Mix flour, baking powder and pumpkin pie spice in a bowl. In another bowl beat egg yolks for 5 minutes, slowly add the 1/3 c. of sugar. In a medium bowl beat wgg whites until peeks form, add 1/2 c. of sugar and stir in the egg yolks mixture, slowly add the dry mixture. Bake in a thin rectangular pan with parchment paper at 360°F for 15 minutes. When it's done, put the thin cake in a towel with sugar and roll it.
*Filling: 1 1/2 c. whipped cream, 1/2 c. icing sugar, 3 tablespoons of cream cheese, 1/3 c. pumpkin pure and 1 teaspoon of pumpkin pie spice. Beat everything until a smooth mixture is formed.

DO WANT :) Pumpkin roll in my family always meant it was Christmas time. And there was always only one roll. And there were 8 of us to share! I must make this and I shall devour it on my own...
